Ingredients
1 cup coconut milk
1 tablespoon ground coriander
1 tablespoon curry powder
2 tablespoons fish sauce
1 teaspoon chili oil
1 pound chicken breast
1 bunch fresh cilantro
1/4 cup chopped peanuts

Method
In a medium mixing bowl, blend together coconut milk, ground coriander, curry powder, fish sauce, and chili oil. Add the strips of chicken breast and stir until they are evenly coated. Cover the bowl and let it marinate in the fridge for anywhere from 30 minutes to 2 hours.
Preheat your grill to a high temperature. Prepare your skewers by threading the marinated chicken strips onto them, then dispose of any leftover marinade.
Grill the chicken skewers for approximately 2 to 3 minutes on each side, ensuring the chicken is cooked through and no longer pink in the center. Once cooked, move the skewers to a serving platter.
