Ingredients
3 tablespoons lime juice
1/4 cup cilantro
1/4 cup mint leaves
1 tablespoon sugar
2 tablespoons fish sauce
2 stalks green onions
1 stalk lemongrass
1 tablespoon chili sauce
1 pound beef steak
4 cups lettuce
1 medium cucumber
1 cup cherry tomatoes
Method
In a large mixing bowl, combine lime juice, finely chopped cilantro, mint leaves, sugar, fish sauce, diced green onions, minced lemongrass, and chili sauce. Mix well until the sugar dissolves completely, then taste and adjust the seasoning with additional sugar or fish sauce as desired. Set this flavorful dressing aside.
Preheat your grill to a high setting and lightly oil the grate to prevent the beef from sticking.
Grill the beef for about 4 to 6 minutes on each side until it is firm yet retains a hint of pink in the center. Aim for a meat thermometer reading of 140°F (60°C) for a perfect medium-rare finish.
