These savory teriyaki chicken skewers are a delightful combination of marinated chicken, fresh vegetables, and sweet pineapple, perfect for grilling and enjoying a delicious outdoor meal.


Ingredients

  • 2 pieces Chicken breast
  • 1 cup Teriyaki marinade
  • 14 pieces Bamboo skewers
  • 1 large Onion
  • 1 large Bell pepper
  • 14 chunks Pineapple

Method

  1. Start by cutting each chicken breast into approximately 10 small pieces and place them in a glass bowl. Pour the teriyaki marinade over the chicken, ensuring it's well coated. Cover and let it rest in the refrigerator for at least 30 minutes to absorb the flavors.
  2. While the chicken marinates, take bamboo skewers and immerse them in water for 30 minutes to prevent them from burning during grilling.
  3. Dice the onion into four chunks of about 1-inch each and do the same with the bell pepper. Set aside 14 pieces of pineapple for the skewers, reserving any leftovers for future use.
  4. Preheat your outdoor grill to a medium heat and lightly oil the grill grates to keep the food from sticking.
  5. After marinating, take the chicken out of the bowl and let any excess marinade drip off. Discard any remaining marinade. Start assembling the skewers by alternating chicken pieces, onion, bell pepper, and pineapple on each soaked skewer.
  6. Place the skewers on the grill and cook for about 4 to 5 minutes on each side, or until the chicken is cooked through and no longer pink. To ensure it’s safe to eat, use an instant-read thermometer to verify that the internal temperature reaches at least 165°F (74°C). Be cautious while handling the skewers as they will be hot.
