This Grilled Summer Vegetable Flatbread Pizza combines fresh seasonal veggies with gooey cheese and a flavorful pesto base, all cooked to perfection on the grill for a delightful summer meal.

Ingredients

  • 1 lb pizza dough
  • 1/2 cup pesto
  • 2 cups shredded cheese
  • 1 medium zucchini
  • 1 medium summer squash
  • 1 large bell pepper
  • 1 medium red onion
  • 4 slices crispy bacon
  • 2 tablespoons butter

Method

  1. Start by preheating your gas grill on High for about 10 to 15 minutes until it's thoroughly heated.
  2. Shape your pizza dough into a circular form, making it ready for grilling.
  3. Reduce the heat on half of the burners to Low, establishing areas of direct and indirect heat on the grill.
  4. Carefully place the dough on the grill over the direct heat. Close the lid and allow it to cook until the bottom is lightly charred, which should take approximately 1 to 3 minutes.
  5. Using tongs, flip the pizza dough and transfer it to the section with indirect heat. Brush the top with pesto and generously sprinkle shredded cheese over it.
  6. Layer on slices of zucchini, summer squash, bell pepper, red onion, and crispy bacon.
  7. Grill the pizza until the cheese is bubbly and melted, which should take around 3 minutes.
  8. For a finishing touch, brush the outer edges of the crust with a buttery glaze and briefly place it under the broiler until it achieves a lovely golden hue.
