Ingredients
2 pieces shallots
1/4 cup soy sauce
2 tablespoons sake
a dash none hot pepper sauce
2 tablespoons fresh cilantro
1 teaspoon ginger
1.5 cups rice flour
1 cup seltzer water
1 piece egg yolk
1 pound shrimp
for frying none cooking oil
Method
In a bowl, mix finely diced shallots, soy sauce, sake, a pinch of hot pepper sauce, fresh cilantro, and grated ginger. Let this blend marinate for about 2 hours.
In a separate bowl, combine 1 cup of rice flour, seltzer water, and an egg yolk, whisking until the mixture is smooth.
Prepare the shrimp by making a slit down the center without cutting all the way through, then gently open them. Pat the shrimp dry using a paper towel and coat them with 1/2 cup of rice flour.
Dip the coated shrimp into the batter, ensuring they are fully covered.
Heat oil in a deep-fryer or a large pot to 375 degrees F (190 degrees C). Fry the shrimp in batches until they turn a beautiful golden brown, which should take around 7 minutes. Once done, place the shrimp on a paper towel-lined plate to absorb excess oil.
Serve the crispy shrimp right away with the zesty dipping sauce on the side.
