2 medium sweet potatoes
1 medium onion
2 large eggs
3 tablespoons olive oil

Start by preheating your oven to a low temperature of 200°F (95°C) and line a baking sheet with paper towels.
In a mixing bowl, soak the grated sweet potatoes in lightly salted water. After soaking, rinse them well and drain using a sieve, then pat them dry with a cloth or paper towels.
Add the rinsed grated onion to the bowl with the sweet potatoes, then mix in the eggs and a dash of pepper until everything is nicely combined.
