  • 2 medium summer squash

  • 1 teaspoon salt
  • enough to cover the bottom of the skillet as needed shortening

Method

  1. Begin by slicing the summer squash into rounds that are approximately ¼-inch thick. Allow them to rest for about 5 minutes to help release excess moisture.
  2. In a shallow bowl, combine flour, a sprinkle of sugar, and a little salt. Dip each squash round into the flour mixture, ensuring to shake off any excess before placing them aside.
  3. In a large skillet, heat some shortening over medium-high heat. Once the oil is hot, carefully arrange the coated squash rounds in a single layer. Fry them until they are golden brown, turning them halfway through the cooking time, which should take around 5 minutes.
  4. After frying, remove the squash bites from the skillet and let them rest on paper towels to absorb any leftover oil.
