2 medium summer squash
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon salt

Begin by slicing the summer squash into rounds that are approximately ¼-inch thick. Allow them to rest for about 5 minutes to help release excess moisture.
In a shallow bowl, combine flour, a sprinkle of sugar, and a little salt. Dip each squash round into the flour mixture, ensuring to shake off any excess before placing them aside.
In a large skillet, heat some shortening over medium-high heat. Once the oil is hot, carefully arrange the coated squash rounds in a single layer. Fry them until they are golden brown, turning them halfway through the cooking time, which should take around 5 minutes.
