Ingredients

  • 2 tablespoons oil
  • 3 cloves garlic
  • 1 medium onion
  • 1 cup baby corn
  • 2 cups fresh mushrooms
  • 1 cup water
  • 2 teaspoons cornstarch
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 small chile pepper
  • 1 bunch cilantro

Method

  1. Heat oil in a large skillet or wok over medium heat. Add minced garlic and sauté until it turns golden brown, which will take about 5 to 7 minutes.
  2. Add sliced onions and baby corn to the skillet, cooking until the onions become translucent, roughly 5 to 7 minutes.
  3. Incorporate fresh mushrooms into the skillet and stir-fry until they begin to soften, around 2 minutes.
  4. In a small bowl, mix water with cornstarch until fully dissolved. Pour this mixture into the skillet with the mushrooms.
  5. Add a splash of fish sauce, soy sauce, and oyster sauce to the skillet, stirring until the sauce is well combined and thickens to a glossy finish.
  6. Once the sauce has thickened, transfer the stir-fry to a serving dish and garnish with sliced chile pepper and fresh cilantro before serving.
