Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold butter
  • 1 cup buttermilk
  • 1/2 cup applesauce
  • 12 halves strawberries

Method

  1. Begin by heating your oven to 400°F (200°C) and prepare two baking sheets by lining them with parchment paper or lightly greasing them.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, and salt. Incorporate cold butter using a pastry cutter or your fingers until the mixture resembles a crumbly texture.
  3. In a separate bowl, combine buttermilk and applesauce. Slowly mix this into the dry ingredients, stirring until a sticky dough forms.
  4. Using two spoons, drop small scoops of dough, roughly half a tablespoon each, onto the prepared baking sheets, aiming to create 36 mounds.
  5. Bake the dough in the preheated oven for 4 to 5 minutes, or until the bottoms are lightly golden. Let the biscuits cool completely.
  6. Once cooled, assemble the skewers by alternating three biscuits and three strawberry halves on each skewer. Top each skewer with a dollop of whipped cream.
