Ingredients
2 pounds whole strawberries
4 cups granulated sugar
1 tablespoon white vinegar
a pinch salt
Method
In a large pot, combine whole strawberries, sugar, vinegar, and a small pinch of salt.
Warm the mixture over medium-high heat, stirring continuously until it begins to boil vigorously, which should take about 15 to 20 minutes.
Keep an eye on the temperature until it reaches 220°F (105°C), indicating that your preserve is ready.
Gently ladle the hot preserve into pre-heated sterilized jars, leaving about a half-inch of space at the top.
Tightly seal the jars and process them in a boiling water bath for 10 minutes.
After processing, allow the jars to cool down. If any seals are broken, store the jars in the refrigerator.
