This vibrant and festive tri-color celebration cake is perfect for any festive occasion, featuring layers of red, white, and blue. It's a delightful treat that not only looks stunning but tastes deliciously sweet with creamy frosting.

Ingredients

  • 1 box cake mix
  • 1 box instant pudding mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • as needed drops red food coloring
  • as needed drops blue food coloring
  • 1 cup butter-flavored shortening
  • 1/2 cup butter
  • 1/4 teaspoon salt
  • 1 teaspoon imitation vanilla extract
  • 4 cups confectioners' sugar
  • 2 tablespoons heavy cream

Method

  1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans with cooking spray.
  2. In a sizable mixing bowl, blend together the cake mix, instant pudding mix, water, vegetable oil, and eggs using an electric mixer until smooth. Divide the batter into three bowls; tint one red, another blue, and leave the third one uncolored.
  3. Pour the colored batters into their respective pans and bake for 10 to 15 minutes, or until a toothpick inserted in the center comes out clean. The cakes should slightly pull away from the edges. Let them cool for about 10 minutes before wrapping each cake in plastic wrap to cool completely.
  4. While the cakes are cooling, prepare the frosting by beating together the butter-flavored shortening, butter, salt, and imitation vanilla extract in a bowl until creamy. Gradually incorporate the confectioners' sugar, one cup at a time, mixing well after each addition. Slowly add the cream until the frosting is smooth and spreadable.
  5. To assemble the cake, place the red cake on a serving plate, discarding the plastic wrap. Generously frost the top, then stack the blue cake on top and frost it as well. Finally, add the plain cake on top and cover the entire towering creation with the remaining frosting.
