A vibrant and refreshing salad combining sweet fruits and crunchy greens, perfect as a light lunch or a side dish.


Ingredients

  • 2 tablespoons sugar
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 2 tablespoons vinegar
  • 4 cups mixed salad greens
  • 1/2 cup dried cranberries
  • 1 cup strawberries
  • 1 medium mango
  • 1/4 cup onion
  • 1/4 cup sliced almonds

Method

  1. Begin by mixing together sugar, oil, salt, and vinegar in a jar. Close the lid tightly and shake vigorously until the ingredients are completely combined.
  2. In a large mixing bowl, toss together a variety of salad greens, dried cranberries, fresh strawberry slices, diced mango, and finely chopped onion.
  3. Just before serving, pour the dressing over the salad and finish with a generous handful of sliced almonds on top.
