These Dutch Caramel Waffle Treats are crispy, sweet waffle cookies filled with a rich caramel glaze, making for an irresistible snack or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 3/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 cup melted butter
  • 1/2 cup corn syrup
  • 2 tablespoons lemon juice
  • 1 cup heavy cream

Method

  1. Start by warming up a non-stick pizzelle iron. In a mixing bowl, combine flour, baking powder, and salt, then set aside.
  2. In a separate large bowl, whisk the eggs together with 3/4 cup of sugar until smooth and fluffy. Mix in the vanilla and lemon extracts for added flavor.
  3. Slowly add melted butter to the egg mixture while whisking continuously, then carefully fold in the dry ingredients until just combined.
  4. Using a spoon or piping bag, drop about 1.5 tablespoons of batter onto the hot pizzelle iron. Close the lid and cook for 50 to 60 seconds, then use a small spatula to remove them and let cool on a wire rack.
  5. To make the caramel glaze, mix the remaining 1 cup of sugar, corn syrup, and lemon juice in a small saucepan. Cook over medium heat without stirring until it reaches a deep amber hue.
  6. Reduce the heat and gradually whisk in heavy cream one tablespoon at a time. If desired, strain the caramel sauce and allow it to cool in a bowl.
  7. To serve, spread some cooled caramel sauce between two waffle cookies to create delightful sandwiches.
