1 cup bread crumbs
1/2 cup milk
1 pound ground beef
1 pound ground pork
1 medium diced onion
1/4 cup chopped parsley
1 stalk celery
1 large egg
2 cloves minced garlic
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
2 tablespoons flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1/2 cup sour cream
2 tablespoons fresh dill
1 teaspoon lemon zest
Method
Start by preheating your oven to 350°F (175°C). Line a baking sheet with aluminum foil and place a baking rack on top, lightly greasing it with cooking spray.
In a large bowl, mix together the bread crumbs and milk, allowing it to soak for about 10 minutes. After soaking, incorporate ground beef, ground pork, chopped onion, parsley, celery, an egg, minced garlic, sugar, salt, and pepper. Blend everything together until it's well mixed and moist.
Use a tablespoon to scoop out the mixture and form it into approximately 36 meatballs, placing them neatly on the prepared baking rack.
Bake the meatballs for around 18 minutes or until they reach an internal temperature of 160°F (71°C).
While the meatballs are baking, melt butter in a large saucepan over medium-low heat. Gradually stir in flour, cooking for about 2 minutes while whisking continuously.
Carefully whisk in the beef broth and Worcestershire sauce, ensuring the mixture is smooth. Keep cooking and stirring until the sauce thickens, which should take about 12 minutes.
Once the meatballs are finished baking, add them to the sauce and let them simmer together for around 3 minutes. Finally, stir in sour cream, fresh dill, and lemon zest, adjusting the seasoning with extra salt and pepper as needed. Serve the dish warm.
