Method
Begin by assembling all the required ingredients for your caramel-coated apples.
To help the caramel stick better, first remove any wax from the surface of the apples. Boil a large pot of water and dip the apples for a few seconds using a slotted spoon, then dry them thoroughly with paper towels and let them cool completely for around 30 minutes.
Once cooled, insert wooden sticks into the bottom of each apple, pushing through the core to create a sturdy handle.
Prepare a baking sheet by lining it with parchment paper. In a saucepan over medium-high heat, combine brown sugar, sweetened condensed milk, corn syrup, and butter.
Bring the mixture to a boil while stirring constantly. Reduce the heat to medium and continue cooking until a candy thermometer reads 248°F (120°C), which should take roughly 25 to 30 minutes. As a test, drop a teaspoon of caramel into a glass of cold water; it should form a firm ball.
When the caramel reaches the desired temperature, take it off the heat and mix in vanilla extract.
Quickly dip each apple into the hot caramel, making sure to coat the entire apple and cover about half an inch of the stick.
While the caramel is still warm, add your choice of toppings to the coated apples.
Let the caramel apples cool on the lined baking sheet for approximately an hour, being cautious as the caramel will be very hot.
