Ingredients
2 cups mashed strawberries
1 cup water
3/4 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
a pinch null salt
1 cup fresh strawberries
Method
In a saucepan, combine the mashed strawberries with water and bring to a boil. Allow it to simmer for about 3 minutes.
Strain the mixture to separate the juice from the solids, adding water as needed to achieve a total of 1 cup of juice. Discard the remaining solids.
In a fresh saucepan, mix together sugar, cornstarch, lemon juice, and salt. Slowly incorporate the strained strawberry juice while stirring. Bring the mixture to a boil, stirring continuously until it thickens and turns clear, which takes about 3 to 5 minutes. Remove from the heat and let it cool slightly.
Carefully fold in the sliced fresh strawberries into the thickened strawberry sauce.
