1 cup butter
1 cup masa harina
1/2 cup water
2 cups fresh corn kernels
1/2 cup cornmeal
1 tablespoon sugar
1/4 cup cream
1 teaspoon salt
1 teaspoon baking powder
Method
Preheat your oven to 375°F (190°C).
In a large mixing bowl, beat together softened butter with an electric mixer until creamy. Gradually incorporate masa harina and water, stirring until the mixture is smooth.
Take fresh corn kernels and pulse them in a blender or food processor until coarsely chopped. Gently fold the chopped corn and cornmeal into the butter mixture.
In another bowl, whisk together sugar, cream, salt, and baking powder until well blended. Slowly add this mixture to the corn batter, stirring until everything is combined.
Transfer the batter to an ungreased 8x8 baking dish.
Cover the dish with aluminum foil and place it inside a larger 9x13 baking pan filled with hot water, ensuring the water reaches about 3/4 inch high.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
After baking, carefully take the smaller dish out of the water bath and let it cool for about 10 minutes before serving.
