2 cups fresh cherries
3/4 cup sugar
2 tablespoons cornstarch
1 teaspoon almond extract
2 tablespoons butter
2 pieces pie crust
Method
Start by preheating your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
Grab a 9-inch pie dish and place the bottom pie crust inside, ensuring to poke holes in it with a fork.
Bake the crust in the oven for around 8 minutes until it achieves a light golden hue. Let it cool for 5 minutes afterward.
In a mixing bowl, blend together fresh cherries, sugar, cornstarch, and a dash of almond extract. Mix thoroughly, then pour this cherry filling into the cooled crust. Dot the top with small pieces of butter before placing the upper crust on top. Seal the edges by crimping and cut slits in the top to let steam escape. Set the pie on your prepared baking sheet.
Return the pie to the oven and bake for 30 minutes. If it starts browning too quickly, cover it loosely with aluminum foil. Continue baking until the crust is a deep golden brown and the filling is bubbling, which may take an extra 10 to 20 minutes. After baking, let it cool on a wire rack for about 15 minutes before enjoying.
