1 cup sugar
1/4 cup water
1 can condensed milk
1 can evaporated milk
3 large eggs
8 oz cream cheese
1 teaspoon vanilla extract
Method
Start by preheating your oven to 350°F (175°C).
In a small saucepan, combine sugar and water over medium heat. Stir occasionally until it turns into a light brown caramel, which should take around 8 to 10 minutes. Pour the caramel into a round glass baking dish.
In a blender, mix together condensed milk, evaporated milk, eggs, cream cheese, and vanilla extract until the mixture is smooth and creamy. Pour this custard blend over the caramel in the baking dish.
Place the baking dish into a larger baking pan and fill the larger pan with water until it reaches halfway up the sides of the baking dish.
Bake in the preheated oven for about 1 hour, or until the custard is set and the top has a lovely golden brown hue.
Once baked, transfer the baking dish to a wire rack to cool to room temperature. After cooling, cover it with plastic wrap and refrigerate for 3 to 4 hours until nicely chilled.
