2 medium sweet potatoes
2 medium white potatoes
1 tablespoon vinegar
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons lemon juice

Method
Begin by boiling sweet and white potatoes in two pots of water. Bring each to a boil, then reduce the heat and let them simmer until tender yet firm—approximately 12-14 minutes for sweet potatoes and 10-12 minutes for white potatoes. Once done, drain and place them in a large bowl. Drizzle with vinegar and set aside to cool.
In another bowl, prepare the dressing by combining mayonnaise, sour cream, lemon juice, and curry powder. Taste and season with salt and pepper according to your preference.
Mix in chopped green onions, diced celery, and fresh cilantro into the cooled potato mixture. Pour the dressing over the salad and gently combine until everything is evenly coated. Refrigerate for at least one hour to enhance the flavors before serving.
