Ingredients
1/2 cup brown sugar
2 tablespoons water
3 cups oats
1/4 teaspoon salt
1 cup chopped walnuts
1 teaspoon ground cinnamon
1/4 cup honey
1 teaspoon vanilla extract
Method
Preheat your oven to 275°F (135°C) and prepare a 10x15 inch baking sheet by lining it with parchment paper.
In a microwave-safe bowl, combine brown sugar and water, then heat in the microwave for about a minute until the sugar completely dissolves.
In a large mixing bowl, mix together oats, a pinch of salt, chopped walnuts, and ground cinnamon. Add the melted sugar mixture along with honey and vanilla extract, and stir well to combine.
Spread the granola mixture evenly on the lined baking sheet. To create clusters, grab small amounts of the mixture and press them firmly together.
Bake in the preheated oven for 20 minutes, then remove and gently stir the mixture with a spoon. Return to the oven for another 25 minutes, or until the granola is lightly golden and will crisp up as it cools.
