These crunchy summer squash fritters are a delightful appetizer, perfect for warm weather gatherings. They're made with fresh squash and have a crispy exterior that complements the soft interior.
Ingredients
2 cups summer squash
1 medium onion
2 large eggs
1 cup flour
1 cup muffin mix
1 teaspoon baking powder
1 teaspoon salt

Method
Heat oil in a deep skillet or fryer to 365°F (185°C).
In a pot of boiling water, add the squash and cook until tender, about 10 minutes. Drain and mash until smooth.
In a mixing bowl, combine the mashed squash, diced onion, and eggs, mixing thoroughly.
In a separate bowl, blend together the flour, muffin mix, baking powder, and salt. Gradually fold the dry ingredients into the squash mixture until fully combined.
Carefully drop spoonfuls of the batter into the hot oil, frying until they turn a golden brown and are crispy all over.
Remove the fritters from the oil and place them on paper towels to drain any excess oil.
