Ingredients
2 cups Fresh vegetables
1 cup Rice noodles
8 pieces Rice paper sheets
1 cup Avocado or tofu
to taste Peanut sauce ingredients
Method
Chop a variety of fresh vegetables into 2-inch pieces and prepare the rice noodles according to the package instructions.
Soak a rice paper sheet in warm water for about 10 seconds until it softens.
Lay the softened rice paper on a clean surface, adding a good amount of vegetables, noodles, and your choice of avocado or tofu in the center.
Fold the bottom and top of the rice paper over the filling, then tightly roll it up like a burrito. Repeat this with the remaining rice papers and fillings.
For the dipping sauce, mix the ingredients for the peanut sauce in a small bowl until well combined, and serve it with the fresh veggie rolls.
