These crispy quesadillas are filled with a savory mixture of beef, vegetables, and melted cheese, perfect for a snack or light meal. Serve them hot with salsa and sour cream for a delightful flavor experience.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 cup corn
  • 1 small serrano pepper
  • 2 cloves garlic
  • 1 can HORMEL® MARY KITCHEN® Roast Beef Hash
  • 1 small chipotle pepper
  • 4 pieces tortillas
  • 2 cups vegetable oil
  • 6 tablespoons shredded mozzarella
  • 1/4 cup cilantro
  • 1/4 cup onion
  • to taste none salsa
  • to taste none sour cream

Method

  1. Begin by heating a skillet over medium flame, then add a drizzle of olive oil.
  2. Sauté finely chopped onions and diced red bell peppers until they soften, which should take around 3 minutes.
  3. Next, add in some corn and minced serrano pepper, cooking for another 2 to 3 minutes, then toss in the minced garlic and let it cook for an additional minute.
  4. Reduce the heat to medium-low and mix in HORMEL® MARY KITCHEN® Roast Beef Hash along with a chipotle pepper. Stir until everything is heated through, about 2 to 3 minutes.
  5. In a different skillet, warm the tortillas over medium heat, turning them once to ensure they become pliable without cracking.
  6. Pour vegetable oil into the skillet and bring it to medium heat.
  7. On each tortilla, spread 2 tablespoons of the beef and vegetable mixture, followed by 1.5 tablespoons of shredded mozzarella. Fold the tortillas in half and fry them in the hot oil until they turn golden and crispy, which should take around 3 minutes per side. Once done, place them on a plate lined with paper towels.
  8. In a small bowl, mix together chopped cilantro and diced onions.
  9. Enjoy the crispy quesadillas served with salsa, sour cream, and the cilantro-onion mixture. Dive in and relish the deliciousness!
