These crispy potato tacos combine fluffy mashed potatoes with sautéed onions, enveloped in warm tortillas and fried to perfection for a delightful snack.
Ingredients
1 cup instant mashed potatoes
1 medium onion
6 pieces tortillas
as needed tablespoons oil
to taste teaspoon salt
to taste teaspoon pepper
as desired various toppings
Method
Start by preparing instant mashed potatoes as per package directions.
In a frying pan, heat oil over medium heat and sauté chopped onions until they are soft and translucent, about 3 to 5 minutes. Stir in the prepared mashed potatoes, seasoning with salt and pepper to your liking.
Warm the tortillas in the microwave for 15 to 20 seconds until pliable.
Place about 1/4 cup of the potato mixture on each tortilla, fold them in half, and secure the edges with toothpicks.
Increase the oil heat in the skillet until it shimmers. Fry each taco until golden and crispy, approximately 1 minute on each side.
Remove toothpicks and add your choice of toppings to each taco.
