Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 2 tablespoons fresh dill
  • 2 large egg yolks
  • 1 pound green beans
  • to taste black pepper

Method

  1. In a skillet set over medium heat, fry turkey bacon until it reaches a crispy texture, which should take around 6 minutes, flipping occasionally. Once done, let it cool a bit before chopping it into small pieces.
  2. In a microwave-safe bowl, mix together chicken stock, cream, lemon juice, minced garlic, and dill. Heat in the microwave on high for 1 minute and 30 seconds.
  3. Prepare a double boiler by placing water in the bottom pot, ensuring it doesn't touch the top pot. Bring the water to a boil. In the top pot, lightly beat the egg yolks and cook while stirring until the mixture thickens and the yolks double in volume, which should take about 3 to 5 minutes. Reduce the heat.
  4. Slowly whisk in the heated stock and cream mixture until it's fully blended, mixing for an additional minute. Add black pepper to taste before removing from heat and covering to keep warm.
  5. Set a steamer basket in a large saucepan and add chicken broth just below the bottom of the basket. Bring the broth to a boil, then add green beans, seasoning with black pepper. Steam the beans until they are crisp-tender, which will take about 5 minutes. You can discard any remaining broth or save it for later.
  6. Transfer the steamed green beans to a serving platter, top with the chopped bacon, drizzle the creamy sauce over, and serve immediately.
