This creamy sweet potato pie is a delightful dessert featuring a smooth filling infused with warm spices and a hint of orange zest, all encased in a flaky crust.


Ingredients

  • 2 cups sweet potatoes
  • 1/4 cup butter
  • 1 can sweetened condensed milk
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • a pinch salt
  • 1 whole pie crust

Method

  1. Boil sweet potatoes in a large pot of salted water for about 20 minutes until they are tender.
  2. Preheat your oven to 350°F (175°C) while the sweet potatoes cook.
  3. Drain the cooked sweet potatoes and transfer them to a mixing bowl. Add butter and use an electric mixer to whip until smooth.
  4. Mix in sweetened condensed milk, eggs, orange zest, vanilla extract, cinnamon, nutmeg, and a pinch of salt until well combined.
  5. Pour the sweet potato mixture into a prepared pie crust and place it in the oven.
  6. Bake for around 40 minutes, or until the pie is set with a slight jiggle in the center. Let it cool before slicing and serving.
