This creamy sweet potato pie is a delightful dessert featuring a smooth filling infused with warm spices and a hint of orange zest, all encased in a flaky crust.
Ingredients
2 cups sweet potatoes
1/4 cup butter
1 can sweetened condensed milk
2 large eggs
1 tablespoon orange zest
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
a pinch salt
1 whole pie crust
Method
Boil sweet potatoes in a large pot of salted water for about 20 minutes until they are tender.
Preheat your oven to 350°F (175°C) while the sweet potatoes cook.
Drain the cooked sweet potatoes and transfer them to a mixing bowl. Add butter and use an electric mixer to whip until smooth.
Mix in sweetened condensed milk, eggs, orange zest, vanilla extract, cinnamon, nutmeg, and a pinch of salt until well combined.
Pour the sweet potato mixture into a prepared pie crust and place it in the oven.
Bake for around 40 minutes, or until the pie is set with a slight jiggle in the center. Let it cool before slicing and serving.
