Ingredients

  • 2 tablespoons butter
  • 2 medium sweet potatoes
  • 2 medium carrots
  • 1 medium apple
  • 1 large onion
  • 1 cup red lentils
  • 1 teaspoon salt
  • 1 tablespoon fresh ginger
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 4 cups vegetable broth

Method

  1. Begin by heating butter in a large pot over medium-high heat. Once melted, add in diced sweet potatoes, chopped carrots, diced apple, and chopped onion. Sauté for about 10 minutes until the onion becomes translucent.
  2. Stir in the red lentils along with salt, grated fresh ginger, black pepper, cumin, chili powder, and paprika. Pour in the vegetable broth and increase the heat to high, bringing the mixture to a rolling boil. After it reaches a boil, reduce the heat to medium-low, cover the pot, and let it simmer for around 30 minutes until the lentils and vegetables are tender.
  3. Using an immersion blender, carefully blend the soup in the pot until it reaches a smooth and creamy texture. Turn the heat back to medium-high and allow the soup to simmer again for about 10 minutes. If the consistency is thicker than you prefer, gradually add water until it meets your liking.
