This creamy sunflower seed Caesar salad offers a delightful twist on the classic recipe, featuring a rich dressing made from sunflower seeds, perfect for a healthy and refreshing meal.

Ingredients

  • 1/2 cup sunflower seeds
  • 2 cloves minced garlic
  • 1 tablespoon capers
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • to taste none black pepper
  • 1/4 cup sunflower oil
  • 2 tablespoons water
  • 4 cups chopped Romaine lettuce
  • 2 cups little gem lettuce
  • 1 cup fresh sprouts
  • for garnish none extra sunflower seeds
  • for garnish none sunflower petals

Method

  1. Begin by making the dressing: blend together sunflower seeds, minced garlic, capers, Dijon mustard, freshly squeezed lemon juice, soy sauce, Worcestershire sauce, grated Parmesan cheese, black pepper, sunflower oil, and a splash of water until smooth.
  2. Adjust the seasoning of the dressing by tasting and adding salt, more black pepper, lemon juice, or Worcestershire sauce to your liking. Once seasoned, cover the dressing and let it chill in the fridge for at least 2 hours or overnight to enhance the flavors.
  3. In a large mixing bowl, combine chopped Romaine lettuce, little gem lettuce, and fresh sprouts. Drizzle the chilled dressing over the greens and toss gently to ensure they are evenly coated.
  4. For a finishing touch, sprinkle additional sunflower seeds and sunflower petals on top. Serve with any leftover dressing on the side, and feel free to add more grated Parmesan cheese if you wish.
