1 package tortellini
2 cups chopped tomatoes
3 cups fresh spinach
1 cup basil
2 cloves minced garlic

1 cup milk
1/2 cup heavy cream
2 tablespoons flour
1 cup grated Parmesan cheese
Method
Begin by boiling a large pot of lightly salted water. Once boiling, add the tortellini and cook for approximately 10 minutes until they become tender.
In the meantime, heat a large saucepan over medium heat and combine diced tomatoes, fresh spinach, chopped basil, minced garlic, along with salt and pepper. Cook until the mixture is bubbling.
In a separate bowl, whisk together milk, heavy cream, and flour until the mixture is smooth. Gradually pour this mixture into the bubbling vegetable sauce and add grated Parmesan cheese. Stir continuously for 3 to 5 minutes until the sauce is heated through.
When the tortellini are ready, drain them without rinsing. Gently fold the tortellini into the creamy sauce in the saucepan, ensuring each piece is thoroughly coated.
