This delightful Savory Shrimp and Orzo Casserole combines tender shrimp and creamy orzo pasta baked to perfection, creating a comforting dish that is both flavorful and satisfying.
Ingredients
2 tablespoons olive oil
1 medium onion
3 cloves garlic
1 teaspoon salt
1 cup orzo pasta
1/2 cup white wine
1 can diced tomatoes
1 can mushroom soup
1 can water
3/4 teaspoons black pepper
2/3 cup Parmesan cheese
1 pound shrimp
to taste crushed red pepper flakes
2 tablespoons butter
1 tablespoon lemon juice
to garnish fresh parsley
Method
Begin by preheating your oven to 350°F (180°C).
In a large, oven-safe skillet, warm some olive oil over medium-high heat. Add chopped onions and sauté for around 3 minutes until they soften. Incorporate minced garlic and 3/4 teaspoon of salt, cooking for an additional 2 minutes.
Stir in the orzo pasta, allowing it to toast for about 1 minute. Add white wine and let it simmer for 1 minute. Then, mix in diced tomatoes and mushroom soup, using the empty tomato can to add an equal amount of water. Sprinkle in 1/4 teaspoon of black pepper and bring the mixture to a gentle simmer, stirring regularly to prevent sticking, until the orzo starts to soften, which should take about 5 to 7 minutes. Remove from heat and stir in the remaining 1/2 teaspoon of black pepper.
Top the mixture with 2/3 cup of grated Parmesan cheese, then layer the shrimp on top. Season with the remaining 1/4 teaspoon salt, more pepper if desired, and a pinch of crushed red pepper flakes. Dot the mixture with small pieces of butter and drizzle with lemon juice, then cover with foil.
Transfer the skillet to the oven and bake for approximately 25 to 30 minutes, or until the orzo is tender and the shrimp is pink and opaque.
After baking, stir the dish until creamy, adding any leftover Parmesan cheese. Garnish with freshly chopped parsley and serve warm.
