Ingredients
4 servings vermicelli noodles
1 pound shrimp
4 cups fresh lettuce
1 cup shredded carrots
1/4 cup sliced cucumber
1 whole avocado
2 tablespoons rice vinegar
1 tablespoon fish sauce
3 tablespoons lime juice
1 teaspoon grated ginger
1 whole birds eye chile
2 tablespoons peanut butter
1/4 cup coconut milk
1 tablespoon hoisin sauce
1/4 cup crushed peanuts
1 teaspoon sambal oelek
2 whole green onions
1/2 cup fresh mint leaves
Method
Gather all the ingredients you will need for the bowl.
Cook the vermicelli noodles according to the package instructions, then rinse them in cold water to stop the cooking. Divide the noodles into four bowls.
Top each bowl with a portion of cooked shrimp, along with a cup of fresh lettuce, a quarter cup of shredded carrots, a quarter cup of sliced cucumber, and a quarter of an avocado.
In a small bowl, combine rice vinegar, fish sauce, lime juice, grated ginger, and chopped birds eye chile for a zesty dressing.
