Ingredients

  • 1 pound chicken breast
  • 1 medium onion
  • 1 medium bell pepper
  • 1 tablespoon lemon zest
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 teaspoon lemon juice
  • 1 bunch fresh cilantro

Method

  1. In a large skillet, warm up some oil over medium-high heat and sauté the curry paste for about half a minute to release its fragrant aroma.
  2. Add in the chicken chunks and cook for roughly 3 minutes until they start to get a nice golden color.
  3. Mix in the chopped onion, bell pepper, and freshly grated lemon zest, stirring everything together until well blended.
  4. Pour in the creamy coconut milk, fish sauce, and a splash of lemon juice; bring the mixture to a vigorous boil.
  5. Reduce the heat and let the curry simmer for 5 to 7 minutes, or until the chicken is perfectly cooked and tender.
