Ingredients

  • 4 cups water
  • 1 cup black rice
  • a pinch salt
  • 1 can coconut milk
  • 1/4 cup sugar

Method

  1. In a medium saucepan, combine water, black rice, and a small pinch of salt, and bring to a high boil.
  2. Once the mixture reaches a rolling boil, decrease the heat, cover the pan, and let it gently simmer for 40 minutes.
  3. After 40 minutes have passed, stir in the creamy coconut milk and sugar, then return to a boil.
  4. Lower the heat again, and let the pudding simmer uncovered until it thickens to a sticky consistency, which should take around 30 minutes.
  5. Allow the pudding to cool for a few moments, then stir well before serving.
