  • 400 ml coconut milk
  • 500 grams monkfish
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1 bunch cilantro

Method

  1. Begin by heating a generous splash of peanut oil in a large saucepan over medium heat.
  2. Add finely chopped onions and sauté them until they become soft and translucent, taking about 3 to 5 minutes.
  3. Stir in diced red bell peppers and cook for an additional 3 to 5 minutes until they become tender.
  4. Introduce the curry paste to the mixture, allowing it to cook for about a minute to fully develop its flavor.
  5. Slowly pour in the creamy coconut milk and bring the mixture to a gentle simmer.
