Ingredients

  • 2 cups coconut milk
  • 1 cup rolled oats
  • 2 tablespoons honey
  • 1/2 cup shredded coconut
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Method

  1. In a medium saucepan, warm coconut milk on medium-low heat until it starts to bubble lightly.
  2. Stir in rolled oats and honey, then lower the heat and let it cook for about 15 minutes, letting the milk soak into the oats.
  3. When the oats are soft, fold in shredded coconut, brown sugar, and a sprinkle of cinnamon.
  4. Cook for another 5 minutes, stirring occasionally, until the oatmeal reaches a creamy consistency and the flavors combine beautifully.
