Ingredients

  • 3 large egg whites
  • 1 cup sugar
  • 2 cups shredded coconut
  • 1/2 cup cocoa powder
  • a pinch salt
  • 1 tablespoon lime juice

Method

  1. Start by preheating your oven to 300°F (150°C).
  2. In a sizable mixing bowl, whip the egg whites until they are frothy. Gradually add the sugar while continuing to beat until you achieve soft peaks.
  3. Once you have soft peaks, incorporate a pinch of salt and a dash of lime juice, then continue beating until stiff peaks form.
  4. Gently fold the shredded coconut and cocoa powder into the egg whites until the mixture is just combined.
  5. Using a tablespoon, drop dollops of the mixture onto a lined baking sheet.
  6. Bake in the preheated oven for approximately 20 minutes, or until the mounds are golden brown and feel firm to the touch.
  7. Allow them to cool on the baking sheets set on wire racks before transferring to an airtight container for storage.
