Ingredients
2 cups water
3 whole fresh lemon
1 cup granulated sugar
2 tablespoons gelatin powder
1/2 cup lemon vodka
to taste none turbinado sugar
Method
In a spacious saucepan, combine water, fresh lemon slices, and sugar. Heat over medium heat, stirring occasionally until the sugar is fully dissolved. Gently mash the lemons to release their juices and fragrant oils.
Continue to simmer the lemon mixture for another 5 minutes, then remove from heat and allow to cool slightly. Strain the mixture to remove the lemon solids, keeping the liquid.
Sprinkle the gelatin powder into the warm lemon syrup and stir until well combined.
Return the saucepan to low heat, stirring the mixture until the gelatin is fully dissolved, which should take about 5 to 10 minutes.
Take off the heat and let the mixture cool for approximately 15 minutes. Once it's cool, mix in the lemon vodka until fully blended.
Pour the sweetened lemon mixture into a 9x13-inch dish and refrigerate for a minimum of 6 hours until completely set.
When ready to serve, dip a sharp knife in hot water and cut the gelatin into small squares. For an extra touch, sprinkle the cubes with turbinado sugar to add a delightful crunch.
