Ingredients
1 cup All-purpose flour
1/2 cup Powdered sugar
1/4 cup Cornstarch
1 tablespoon Lemon zest
1/4 teaspoon Salt
1/2 cup Butter
2 tablespoons Vegetable oil
2 cups Strawberries
1 cup White sugar
2 tablespoons Lemon juice
2 large Eggs
Method
Preheat your oven to 350°F (175°C).
In a food processor, combine the flour, powdered sugar, cornstarch, lemon zest, and a pinch of salt for the crust until blended. Add butter and oil, pulsing until the mixture resembles coarse crumbs. Firmly press this blend into an 8-inch square baking dish.
Bake the crust for about 20 minutes, or until it achieves a beautiful golden hue.
While the crust is baking, blend the strawberries in the food processor until smooth. Strain the puree to remove seeds, then transfer it to a mixing bowl. Stir in white sugar, flour, lemon juice, eggs, and a small amount of salt, whisking until everything is well incorporated.
Once the crust is done, pour the strawberry filling over the hot crust. Return the dish to the oven and bake for an additional 20 minutes, or until the filling has set.
Allow the dish to cool on a wire rack for around 30 minutes. After cooling, refrigerate for about 2 hours to chill. Finally, sprinkle the top with powdered sugar and cut into 16 scrumptious bars.
