A vibrant and tangy jam made with strawberries and orange, thickened with chia seeds for a nutritious twist.


Ingredients

  • 2 cups fresh strawberries
  • 1/2 cup fresh orange juice
  • 1/4 cup granulated sugar
  • 1 teaspoon orange zest
  • 2 tablespoons chia seeds

Method

  1. In a medium saucepan, mix together ripe strawberries, freshly squeezed orange juice, sugar, and orange zest over medium heat.
  2. Stir the ingredients well until combined and bring the mixture to a vigorous boil, then lower the heat to medium-low.
  3. Let it simmer for about 10 minutes, stirring occasionally to avoid sticking.
  4. Add chia seeds to the simmering mixture and stir until fully incorporated.
  5. Continue to simmer for another 5 minutes, or until the jam starts to thicken. For a smoother texture, use a potato masher.
  6. Once the desired thickness is achieved, remove the pan from heat and allow the jam to cool completely; it will thicken more as it cools down.
  7. Pour the cooled jam into a clean jar and refrigerate for storage.
