1 whole ham
1 cup brown sugar
1 cup pineapple juice
1/3 cup honey
1 whole orange
2 tablespoons Dijon mustard
1 teaspoon ground cloves
Method
Begin by preheating your oven to 325°F (165°C). Place the ham on a roasting rack inside a large baking dish.
Allow the ham to roast uncovered for a period of 2 hours.
In a medium saucepan, combine brown sugar, pineapple juice, and 1/3 cup of honey. Grate the zest of an orange and incorporate it into the mixture, then squeeze in the fresh orange juice. Add Dijon mustard and ground cloves; heat over medium-high heat until the mixture reaches a boil. Once boiling, reduce the heat and let it simmer for 5 to 10 minutes until it reaches a thick, syrupy consistency.
Sample the glaze and adjust the flavors according to your preference by adding some lemon juice for a zesty kick or a bit more honey for extra sweetness. Set this glaze aside for later use.
