This delightful dish combines the natural sweetness of sweet potatoes with a hint of orange, topped with a crunchy cinnamon crumb and finished with fluffy, toasted marshmallows.
Ingredients
4 medium sweet potatoes
1/4 cup fresh orange juice
1/2 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup margarine
1 cup mini marshmallows
Method
Preheat your oven to 350°F (175°C).
Place sweet potatoes in a 6x10 inch baking dish and drizzle with fresh orange juice, then set aside.
In a mixing bowl, blend together flour, sugar, ground cinnamon, and a pinch of salt. Cut in the margarine using two knives or a pastry cutter until the mixture resembles coarse crumbs. Sprinkle this mixture evenly over the sweet potatoes.
Bake in the oven for 30 minutes.
Remove the dish from the oven and turn on the broiler. Spread marshmallows on top and broil until they are golden brown and puffy.
