Ingredients

  • 1 cup brown sugar
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 cup cold butter
  • 1/2 cup walnuts
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup yogurt
  • 1 teaspoon vanilla extract
  • 2 medium apples

Method

  1. Preheat your oven to 350°F (175°C). Prepare a Bundt pan (9 or 10 inches) by greasing it and dusting with flour.
  2. In a medium bowl, combine brown sugar, flour, and cinnamon for the streusel topping. Cut in cold butter with a fork until the mixture forms coarse crumbs. Stir in chopped walnuts and set aside.
  3. In a separate bowl, whisk together flour, baking powder, and baking soda; set aside for later use.
  4. In a large bowl, beat together sugar and butter until the mix is light and airy. Add eggs one at a time, making sure to blend well after each addition. Mix in yogurt and vanilla extract, then gradually fold in the flour mixture until just blended.
  5. Pour about 3 cups of the batter into the prepared Bundt pan. Evenly distribute 1/4 of the streusel mix over the batter, followed by a layer of sliced apples. Add half of the remaining streusel, then pour in the rest of the batter. Top with the last of the streusel, pressing it down gently.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan on a wire rack for 15 minutes. To remove, place a cookie sheet over the pan and carefully flip it. Allow the cake to cool completely before slicing and serving.
