12 pieces strawberries
8 ounces cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup graham crackers
1 cup chocolate chips
1 tablespoon canola oil
Method
Line a baking sheet with parchment paper and prepare a shallow dish filled with crushed graham crackers.
In a mixing bowl, blend cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Transfer this mixture into a piping bag fitted with a large round tip.
Carefully slice the tops of the strawberries to hollow them out, creating a small cavity. Fill each strawberry with about a tablespoon of the cream cheese filling, allowing some to overflow.
Turn the filled strawberries upside down and dip the cream cheese tops into the graham cracker crumbs, making sure they are generously coated.
In a microwave-safe bowl, mix chocolate chips with canola oil. Heat in 30-second increments, stirring in between, until the chocolate is completely melted and smooth, usually taking 1 to 3 minutes depending on your microwave's wattage.
Dip the tops of the strawberries into the melted chocolate and place them on the prepared baking sheet. Refrigerate until the chocolate is firm.
