A refreshing and aromatic salad combining bulgur wheat with fresh vegetables and herbs, perfect for a light side dish or a healthy snack.


Ingredients

  • 1 cup cracked bulgur wheat
  • 2 cups boiling water
  • 2 medium tomatoes
  • 1 medium cucumbers
  • 1 small onions
  • 1 clove garlic
  • 1 bunch parsley
  • 1 bunch mint
  • to taste salt
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Method

  1. Begin by placing cracked bulgur wheat in a bowl and covering it with 2 cups of boiling water. Allow it to sit for 30 minutes, then drain and press out any excess water.
  2. In a spacious mixing bowl, blend the hydrated bulgur with chopped tomatoes, diced cucumbers, finely minced onions, garlic, fresh parsley, and mint. Season with salt, a splash of lemon juice, and a drizzle of olive oil.
  3. Gently combine all the ingredients to ensure even distribution, then refrigerate the salad for at least 4 hours to let the flavors meld beautifully.
  4. Just before serving, give the salad a gentle toss to reintroduce all the ingredients.
