This chilled summer fruit tart features a creamy custard base topped with an array of fresh, vibrant fruits. Perfect for warm weather gatherings.
Ingredients
3 large eggs
2 tablespoons cornstarch
1/4 cup maple syrup
1 cup almond milk
1 pre-baked tart crust
assorted to taste fresh fruits
Method
In a medium saucepan, mix together eggs, cornstarch, and maple syrup, whisking until the mixture is smooth and well combined.
Slowly incorporate almond milk into the mixture while whisking continuously over medium heat until it reaches a boil. Keep stirring to avoid any sticking.
Once the mixture starts to boil, take the saucepan off the heat and allow the custard to cool for about 5 minutes.
Pour the cooled custard into a pre-baked tart shell and elegantly arrange a variety of fresh fruits on top.
Refrigerate the tart for at least 30 minutes before slicing and enjoying.
