This delightful summer berry medley combines fresh fruits with a sweet raspberry syrup and a velvety whipped cream topping, perfect for warm days.
Ingredients
1 cup water
5 tablespoons sugar
1/4 cup raspberry liqueur
to taste tablespoon lemon juice
2 pieces nectarines
1 cup cherries
1 cup strawberries
1 cup fresh raspberries
1 cup blueberries
1 cup heavy cream
2 teaspoons sugar
1 teaspoon raspberry liqueur
to taste tablespoon sliced almonds
Method
In a saucepan, mix together water, five tablespoons of sugar, a quarter cup of raspberry liqueur, and a splash of lemon juice. Heat the mixture over medium-low heat until it reaches a boil, then reduce to low and let it simmer, stirring frequently, until the sugar dissolves completely, which should take about eight minutes. Once done, let it cool.
In a large mixing bowl, combine diced nectarines, pitted cherries, sliced strawberries, fresh raspberries, and blueberries. Once the syrup has cooled, drizzle it over the fruit and gently mix to coat everything evenly.
In a separate bowl, use an electric mixer to whip the heavy cream along with two teaspoons of sugar on high speed until stiff peaks form. Carefully fold in one teaspoon of raspberry liqueur into the whipped cream to enhance the flavor.
To serve, place the fruit salad into bowls, generously top with the whipped cream, and finish with a sprinkle of sliced almonds for a delightful crunch.
