A refreshing pie filled with strawberries and topped with whipped cream, perfect for cooling off on a warm day.
Ingredients
2 cups fresh strawberries
1 cup sugar
2 tablespoons cornstarch
1/4 cup water
1 whole pre-baked pie crust
1 cup heavy cream
Method
Gather all the ingredients you will need for this delightful pie.
Place half of the ripe strawberries into a pre-baked pie shell, keeping the other half for later.
In a medium saucepan, combine the reserved strawberries with sugar and heat them over medium heat, stirring often until the mixture begins to bubble.
In a separate small bowl, blend cornstarch with water until it is a smooth paste. Gradually stir this mixture into the bubbling strawberries, then lower the heat and keep stirring until the sauce thickens, which should take around 10 minutes.
After thickening, pour the luscious strawberry sauce over the strawberries in the pie shell, making sure they are evenly coated. Refrigerate the pie for at least 3 hours until it is set.
Before serving, whip the heavy cream in a bowl until it forms soft peaks.
Cut the pie into slices and serve each piece with a generous spoonful of whipped cream on top. Relish every bite!
