A refreshing no-bake dessert that layers creamy cheesecake filling with graham crackers and fresh strawberries, perfect for warm days.

Ingredients

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 8 oz whipped topping
  • 16 sheets graham crackers
  • 5 cups strawberries

Method

  1. Gather all the necessary ingredients before you start.
  2. In a large mixing bowl, use a stand mixer fitted with a paddle attachment to blend the cream cheese on medium speed for about 2 minutes until smooth and creamy, making sure to scrape down the sides as needed. Next, incorporate the powdered sugar, lemon zest, lemon juice, and vanilla extract, mixing for another minute until everything is well blended. Carefully fold in the whipped topping until the mixture is consistent.
  3. Take a 13x9-inch baking dish and spread half a cup of the cream cheese mixture evenly across the base. Arrange roughly 8 graham cracker sheets on top, breaking them as needed to fit without gaps.
  4. Spread 3 cups of the cream cheese mixture over the graham crackers, smoothing it evenly. Then, layer 2 1/2 cups of sliced strawberries over the cream cheese, ensuring maximum coverage. Repeat the layering process one final time, finishing with a layer of graham crackers, the remaining cream cheese mixture, and the rest of the strawberries. Cover the dish with plastic wrap and chill in the refrigerator until it sets, which can take a minimum of 4 hours and up to 12 hours for the best results.
