A refreshing and creamy chilled soup perfect for warm days, combining tender potatoes with aromatic dill and green onions.
Ingredients
2 cups potatoes
enough to cover water
1 bunch green onions
1 tablespoon fresh dill
1 cup buttermilk
1/2 cup half-and-half
Method
Start by placing diced potatoes in a large saucepan and add enough water to completely submerge them.
Bring the water to a vigorous boil over high heat, then reduce to a simmer and cook until the potatoes become tender, about 25 minutes.
Once the potatoes are cooked through, incorporate the chopped green onions, fresh dill, and smooth buttermilk, allowing the mixture to come back to a soft simmer.
Right before serving, fold in the half-and-half to enrich the soup's texture.
